peel & finely cube

1 butternut squash

Dice 1 red onion

sautè squash & onions in 2 T olive oil, salt, & pepper until fork tender (about 8 min. on med.)

Mix With: 2 c (400 g) cooked lentils

lettuce leaves

Spoon Mixture into Butter Lettuce leaves
