A colorful crudités platter or board is a great appetizer to start any-gathering. Crudités means “raw things” in French, and one typically consists of raw vegetables with dip, but you can also add nuts, olives, fruit, cheese, breadsticks, or crackers to make it a heartier spread. I like to collect as many “mini” vegetables as I can find, in as many colors as possible. Serve it with your favorite dip or dressing or try my Walnut Dip.

Ingredients

  • 1 watermelon radish I use a mandoline to slice it very thinly
  • ¼ head purple cauliflower cut into florets
  • 2 heads endire yellow or purple, leaves peeled apart
  • 4 mini cucumbers keep peel on, quarter lengthwise
  • 8 mini carrots peeled & stems trimmed
  • 1 c (145 g) cherry tomatoes mix of yellow & red
  • 12 mini peppers sweet peppers—yellow, orange & red

Method

On a large platter or cutting board, arrange the vegetables around the dip by color. Other ideas: red radishes, bell pepper slices, broccoli, snap peas, green beans, celery, jicama, asparagus & mandoline-sliced beets.
