Method

In the food processor, mix 1 (16 oz/454 g) bag frozen peas (defrosted), juice from ½ lemon, 1 c (50 g) mint (a few stems are OK), ½ c (120 ml) olive oil, 1 clove garlic & a pinch of salt. Blend until very creamy. Enjoy with crudités, on bread, or with crackers.
