Lavender grows abundantly in southern France, and I loved seeing big dried bunches of it for sale at the farmers’ market in Antibes, just steps from where we stayed.


In a pitcher, steep 2 lavender tea bags in 2 c (480 ml) hot water for 5 min.

Remove the tea bags & stir in 3 T agave or honey until dissolved.

Add 2 c (480 ml) cold water & juice from 4 lemons (about ½ c/120 ml). Stir.

Allow to cool, then pour over ice & garnish with lemon slices & sprigs of culinary lavender. Add more agave if you wish.
