In every country we visited, we saw orchards bursting with oranges, which inspired this recipe. I also like this salad because it does quite well when made in advance (however, add the basil just before serving).

Method

Peel 5 large golden beets & cut into 1-in (2½-cm) cubes. Boil in salted water for 5-7 min, until slightly tende. Strain & run under cold water to cool. Toss the beets in a bowl with 2 peeled, cubed oranges, 2 T chopped basil, 2 T sliced red onion, 1 T olive oil, salt & pepper.
