Pesto is from the region of Liguria, Italy, that we visited and it is not only for pasta! I also love it as a dressing on salads.

Ingredients

  • 1 ear corn, kernels removed
  • 1 English cucumber, peel on, cubed
  • ½ c (60 g) chopped roasted walnuts
  • ¼ c (40 g) pitted Kalamata olives, chopped
  • 1 green bell pepper, cubed
  • ¼ red onion, diced

Method

Toss all ingredients in a boul with 5 T store-bought pesto or the Pistachio Pesto. Enjoy chilled or at room temp.
