Use a mandoline (or a knife) to very thinly slice 1 large English cucumber into rounds (peel on). Fan the slices out on a round platter or large plate, overlapping the edges of each slice a bit. Start at the edges of the platter & move inward. Start a second layer on the outer edge if necessary to fit all the pieces.
sprinkle over the cucumber
pink nuts
fresh dill
golden raisins
chopped pistachios
