For the filling

  • cherry tomatoes Β½ c (75 g) diced
  • mozzarella pears Β½ c (40 g) (or diced fresh mozzarella)
  • pomegranate seeds ΒΌ c (35 g) plus a hit of olive oil, salt & pepper
  • stir


Halve 2 avocados lengthwise & remove the pits. Spoon the filling into each. Serve them with spoons, each drizzled with a bit more olive oil, salt & pepper. Serve any leftover filling in a separate bowl. The stuffed avocados can also be served on a bed of dressed greens.
