I think the dishes we tasted in the Mediterranean region were so good because they used seasonal produce that was grown nearby and recently picked. This salad is best made during the warmer months when your farmers’ markets are selling in-season peaches, corn, and tomatoes.


Toss in a bowl

  • 2 peaches, cut into small cubes
  • 2 ears of corn, kernels cut off
  • 1 c (145 g) halved yellow cherry tomatoes
  • 1 small orange bell pepper, diced
  • ¼ red onion, diced
  • 2 T chopped basil
  • 2 T chopped mint
  • 1 T olive oil
  • 2 t red wine vinegar


Serve in a bowl or on a platter topped with 2 T grated Parmesan & a sprinkling of black pepper.
