Ingredients

  • cooked wild rice - 3 c (432 g)
  • cherry tomatoes - β…” c (95 g) halved yellow & red
  • marinated artichoke heats - 5 pieces from a jar, sliced (about 4 T)
  • sun-dried tomatoes - about 2 T chopped from a jar (in oil, drained)
  • capers - 2 T from a jar (drained)
  • red onion - ΒΌ c (30 g) diced
  • Italian parsley - β…“ c (17 g) chopped (loosely packed)

Method

Mix all ingredients in a bowl with 2 T oil, 1 T red wine vinegar, salt & pepper. This does very well made ahead, but if you do so, add the parsley just before serving.
