Method

  1. peel & cube ½ Butternut squash (about 3 c/345 g of 1-in/-cm cubes)
  2. Roast the cubes on a baking sheet with a generous amount of olive oil plus a bit of salt & pepper at 425°F (220°C) for 30-40 min (tossing once) or until fork-tender & a bit browned
  3. arrange the roasted squash on a platter or cutting board with 8 oz (225 g) of Burrata cheese & a handful of fresh arugula

with grilled, toasted, or pan-fried slices of rustic bread, plus a fork & knife & additional salt, pepper & olive oil so guests can build their own toasts
