  • 5 scallions
  • 1 bunch broccolini, (or broccoli rabe)
  • 2 cloves garlic
  • olive oil
  • salt & pepper


Finely chop & sauté 2-3 min on med/low

Roll out 16 oz (455 g) store-bought whole-wheat pizza dough into 2 (10-in/25-cm) rounds. Spread the broccolini mixture out on one round then sprinkle with 2 oz (55 g) crumbled feta. Place the other dough round on top & pinch the edges. Sprinkle with grated parmesan, salt & pepper. Bake on an oiled sheet at 425°F (220°C) for about 15 min, until golden. Cut into wedges & serve warm. You can also serve this with marinara or pesto as a dipping sauce.
