This is a staple in tapas bars and a widely available vegetarian dish when traveling in Spain. Usually it’s just egg, potatoes & onions, but I like to round it out by adding greens.
Slice 3 small red potatoes & 1 small red onion into very thin circles (I use a mandoline).
