Yield: Serves 4-6

Ingredients: Grate I small beet using a fine grater (no need to peel); Add the grated beet, juice from ½ lemon, 2 oz (55 g) goat cheese, 2 T olive oil, plus salt & pepper to taste; Drain the pasta then put it back in the hot pot; Boil 8 oz (225 g) pasta (I used long fusilli)
