  1. Boil 8 oz (225 g) pasta (I used long fusilli)
  2. Grate I small beet using a fine grater (no need to peel)
  3. Drain the pasta then put it back in the hot pot
  4. Add the grated beet, juice from ½ lemon, 2 oz (55 g) goat cheese, 2 T olive oil, plus salt & pepper to taste

Serve topped with fresh herbs (I used parsley)
