When I was studying art in Italy in college, one of my favorite pasta dishes was simply aglio, olio, e peperoncino (garlic, oil & red pepper flakes! I’ve started with that in mind and added some lemon and greens. You rarely see whole-wheat pasta at restaurants in Italy, but to me it feels a little lighter and is perfect for a healthy weeknight meal.


  1. Boil 8 oz (225 g) whole-wheat spaghetti according to package instructions.
  2. Slice 5 leaves of rainbow chard very thinly (including stalks) & sauté in olive oil on med heat with 4 cloves minced garlic for 2-3 min or until wilted. Turn off the heat.
  3. Strain the cooked pasta & add it to the skillet with the chard. Also stir in juice from ½ lemon, 2 T grated Parmesan, a sprinkle of red pepper flakes & a bit more olive oil, salt & pepper.

Serve hot with additional lemon wedges, salt & pepper.
