One of our favorite meals in Barcelona was at the restaurant Tapeo in the historic El Born neighborhood, which came recommended by several friends. One of the tapas I loved most there was an eggplant dish with honey and lime, which I had to try to re-create. The flavor combination is so simple and delicious! we saw a similar dish at another favorite restaurant, Lolita Taperia, that used molasses instead of honey (and no lime). Both were served as an appetizer with a toothpick, but this dish could also be served as a side to any entree.

Method

cut 1 eggplant into 1-in (2½-cm) pieces & fry on med in a large skillet with a generous amount of olive oil (I use about ½ c [120 ml], adding a little at a time as I stir). Turn the pieces a few times until golden & crispy on a couple sides, about 10 min.

Transfer the eggplant pieces to a platter then sprinkle with:

  1. lime zest from 1 small lime
  2. honey about 1 T
  3. flaky salt I like Maldon brand
