Herbes de Provence is a dried spice mixture (available in most grocery stores) with herbs typical to the Provence region of southern France. It often includes rosemary, thyme, oregano, and lavender, & it’s one of my favorite additions to roasted vegetables.

Ingredients

  • Brussels sprouts 16 oz (455 g) halved & trimmed (about 2 cups)

Method

Spread the vegetables out on a baking sheet & sprinkle with about 1½ t herbs de Provence, plus plenty of olive oil & a sprinkle of salt & pepper.

Roast at 425°F (220°C) for 25-30 min.
