  • 250 g/9 oz/2 cups pasta flour
  • 5-6


Place the flour and 5 of the yolks in a food processor and mix on high speed for 1 minute. Once it starts to resemble moist breadcrumbs, stop the machine, or add the extra egg yolk if dough appears to be too dry.

Wrap in plastic and put in the fridge to rest for 1 hour before use.
