This recipe was inspired by the infamous cocktail known as the Ramos gin fizz, with all the fizz and none of the gin. It requires lots of shaking to get the right amount of foam. But trust me—it’ll all be worth it in the end when you have a gorgeous, social-media-worthy cocktail.
In a cocktail shaker, combine the egg white, half-and-half, lemon juice, lime juice, and strawberry syrup. Shake without ice for 15 seconds. Add ice to the shaker and shake for an additional 15 seconds. Strain into a highball glass and top with the club soda.
