Green wheat is freekeh in modern Syria, and may be obtained from Middle Eastern grocers or specialty importers.

Ingredients

  • 1 cup green wheat
  • 1 cup coarse grain bulgur
  • 4 tablespoons

Method

  • Pick over green wheat and wash it in several changes of water (until the water runs clear); mix with bulgur. Heat ghee in a sauté pan and use to cook the onion over a slow fire without browning.
