The injera flatbreads are most definitely an acquired taste. Unlike most Middle Eastern flatbreads that are soft and flavoursome from the addition of herbs, spices and olive oil, these Ethiopian fermented flatbreads have a distinct sourness to them, that does works well when mopping up a spicy or sweet stew of vegetables and pulses or in a rich creamy dip of labane or hummous, but not really on their own…
