Freekeh flour is a whole wheat flour, that has the distinctive smoky flavour from the roasting of the immature kernels on open fires. It can be used for baking bread, cakes and pastry in the same way as all-purpose wheat flours. As a speciality flour, it is not sold in supermarkets or wholefood shops, but the cracked wheat is readily available, so simply grind the kernels in a spice or coffee grinder and make your own. This is an easy bread to make and full of flavour.
