The round “cob” was a popular bread in Middle England, served at feasts and banquets as an edible bowl to hold soup or stews, and eaten at the end once sodden from the flavoursome broths. It was believed to have preceeded the sourdough in England and was much simpler to make. Wholemeal emmer flour pairs perfectly with the earthiness of the walnuts and enhances the nutty flavour of the wild wheat.
