This is a dark, moist, spiced ginger cake that smells just as good as it tastes. The rye flour lends itself well to the flavours of both fresh and dried ginger, so play around with the quantities of each to suit your own taste. I know there seems to be a lot of ingredients in this recipe, however it is simply a “throw together” traybake & in about hour you will have a delicious afternoon tea cake.
