Method

  1. Pour the milk into a saucepan and whisk in half the sugar. Bring to a boil, stirring until the sugar dissolves. Remove from the heat and let cool to 176°F (80°C).
  2. Whisk the egg yolks and remaining sugar together on high speed until pale and thick. Pour one-quarter of the hot milk slowly into the egg yolks and sugar, whisking continuously until incorporated.
