Coffee syrup (make 1 day ahead)

  • ¼ cup ( oz./50 g) sugar

Method

  1. Prepare the coffee syrup the day before needed. Make a dry caramel with the sugar. When the caramel is dark amber, put on an oven mitt to protect your hand against boiling splatters and very carefully pour in the hot water, stirring constantly with a wooden spoon.
  2. Whisk in the ground coffee, cover with plastic wrap, and let infuse for 24 hours in the refrigerat
