Method

  1. In a mixing bowl, stir together the almond powder or blanched whole almonds, the sugar, and about 1 egg white.
  2. Transfer one-third of the mixture to the food processor and process until smooth.
  3. Repeat, adding another third, followed by the remaining third. Gradually add a little more egg white as necessary, to soften the mixture and make it malleable.
