  • 10½ oz. (300 g) marzipan made with blanched almonds
  • Natural paste food colorings (see Chef’s Notes

Method

  1. Use your hands to knead food coloring or powder into the marzipan, until it is evenly colored to the desired shade.
  2. Dust the work surface with cornstarch.
  3. Roll out the marzipan to the desired thickness, lifting and rotating it gently after each roll to prevent it from sticking and cracking. If this happens, gather the marzipan into a ball and roll it
