  • 5 oz. (150 g) dark chocolate, 55% cacao, chopped

Method

  1. Melt the chocolate in a bowl over a saucepan of barely simmering water (bain-marie), stirring with a flexible spatula.
  2. Stir in the confectioners’ sugar, followed by the butter, and continue stirring over the heat until smooth.
  3. Remove from the heat and stir in the water, 1 tbsp at a time, to cool the icing: it should be lukewarm when you spread it over
