Method

  1. Place the chocolate in a heatproof mixing bowl.
  2. Mix together the pectin and the sugar.
  3. Pour the water into a saucepan, then whisk in the pectin and sugar. Bring to a boil, stirring regularly.
  4. Add the glucose, return to a boil, and boil for 2 minutes.
  5. Skim off any impurities from the surface, take off the heat, and let cool to 160°F
