Method

  1. Mix the pectin with the sugar.
  2. Pour the raspberry puree into a saucepan, then whisk in the pectin and sugar.
  3. Bring to a boil and add the neutral glaze. Bring back to a boil, whisking continuously, and boil for 2 minutes.
  4. Skim off any impurities from the surface, if necessary, and let cool completely.
  5. Transfer to an airtight contain
