  • 1⅓ cups (9 oz./250 g) sugar

Method

  1. Make a dry caramel with the sugar in the large saucepan, following the instructions.
  2. Remove from the heat and set aside for about 5 minutes while you heat the cream.
  3. Bring the cream to a boil in another saucepan. The temperature of the caramel and the hot cream must be about the same, so that the cream does not curdle when it is added to the caramel.<
