Divide the puff pastry dough in half. Roll each half separately on a lightly floured surface into a square with a thickness of ⅛ in. (3 mm). Place the 10-in. (26-cm) plate upside down on the pastry and cut around it (the trimmings can be saved for another recipe).
Roll one pastry circle around the rolling pin and carefully unroll it onto the cookie sheet.
