Method
- Preheat the oven to 340°F (170°C/Gas Mark 3).
- To prepare the chocolate sponge layer, whisk the egg yolks with half the sugar on high speed until pale and thick.
- Whisk the egg whites in a separate bowl until they hold firm peaks, gradually whi
