Preheat the oven to 400°F (200°C/Gas Mark 6).
Roll the puff pastry dough on a lightly floured surface into a 9-in. (24-cm) circle. Place on the baking sheet, prick all over with a fork, then brush with the beaten egg white. Sprinkle over the sugar, whi
