  • 3 tbsp ( oz./50 g) butter + more for the pan

Method

  1. Lightly grease the tart pan with butter. Weigh out 3½ oz. (100 g) of the pastry dough for decoration. Cover with plastic wrap and chill until using.
  2. Roll the remaining dough thinly into a large circle on a lightly floured surface. Line it into the tart pan. Chill until using.
  3. If using fresh plums, wash and dry them. Cut the plums
