1. Preheat the oven to 430°F (220°C/Gas Mark 7).
2. To make the éclairs, spoon the choux pastry dough into the pastry bag with a fluted or plain tip. Pipe 10 × 6-in. (15-cm) logs onto the cookie sheet.
