Ingredients
- 2½ cups (600 ml) whole milk, divided
- 1 small pinch salt
Method
- Heat 1½ cups (350 ml) of the milk with the salt in a saucepan. Stir in the butter, then bring to a boil.
- Remove from the heat and immediately stir in the flour until smooth, using a wooden spatula.
- Cook briefly over low heat, stirring constantly, until the mixture thickens.
- Transfer to the bowl of the stand mixer
