  • cups (600 ml) whole milk, divided
  • 1 small pinch salt

Method

  1. Heat 1½ cups (350 ml) of the milk with the salt in a saucepan. Stir in the butter, then bring to a boil.
  2. Remove from the heat and immediately stir in the flour until smooth, using a wooden spatula.
  3. Cook briefly over low heat, stirring constantly, until the mixture thickens.
