  • 2 lb. (1 kg) ripe but firm fresh apricots, or 1 lb. 2

Method

  1. If using dried apricots, soak them in warm water for 2 hours to make them swell.
  2. If using fresh apricots, wash and dry them. Cut them in half and remove the pits.
  3. To prepare the white wine syrup, combine the white wine, sugar, and lemon slices in a saucepan. Heat gently until the sugar dissolves, then bring to a simmer.
