Method

  1. Wash, trim, and peel the rhubarb. Cut the stalks into small pieces.
  2. Place in a saucepan, alternating layers of rhubarb with layers of sugar.
  3. Add the vanilla bean and water. Bring to a simmer over low heat. Simmer very gently for 30 minutes, stirring occasionally.
  4. Remove from the heat and let cool.
