Method
Wash, trim, and peel
the rhubarb. Cut the stalks into small pieces.
Place in a saucepan
, alternating layers of rhubarb with layers of sugar.
Add the vanilla bean
and water. Bring to a simmer over low heat. Simmer very gently for 30 minutes, stirring occasionally.
Remove from the heat
and let cool.
