  • lb. (1.5 kg) fresh pears, preferably a small, firm variety

Method

  1. Peel and core the pears from the base, leaving the stalks attached.
  2. Place the pears in a saucepan with the prunes and walnuts. Pour in enough red wine to cover them. Add the sugar, cinnamon stick, and bay leaves.
  3. Heat to a gentle simmer until the sugar dissolves.
