Fruit jellies

  • 2 sheets gelatin, 180–200 Bloom
  • 20 raspberries or small, sweet strawberries, preferably Fraises des Bois
  • Generous

Method

  1. To prepare the fruit jellies, soak the gelatin in a bowl of cold water until softened.
  2. Wash and dry the berries. Hull and trim the tops so that they will fit inside the cavities of the mold.
  3. Heat the syrup to a simmer, then take off the heat. Squeeze the gelatin to remove excess water, then whisk it into the warm syrup until melte
