Fruit jellies
2 sheets gelatin, 180–200 Bloom
20 raspberries or small, sweet strawberries, preferably Fraises des Bois
Generous Method
- To prepare the fruit jellies, soak the gelatin in a bowl of cold water until softened.
- Wash and dry the berries. Hull and trim the tops so that they will fit inside the cavities of the mold.
- Heat the syrup to a simmer, then take off the heat. Squeeze the gelatin to remove excess water, then whisk it into the warm syrup until melte
