Summer is the best time of the year to enjoy Dover Sole, but the similarly named but unrelated lemon sole is more widely available – you can find it during most of the year – which means you can enjoy this dish all year round, too. For me, sole is sublime: elegant, firm and deliciously delicate, yet full of flavour. Although it is very versatile, sole actually needs nothing more than grilling and topping with a light, hazelnut-coloured herb butter to create perfection – pure and simple! Thi
