When a dish has olives in it, more often than not it comes from the South of France. I love olives, so it follows that I love the food from the south, and I couldn’t resist including this recipe. It’s a great classic from Nice and a firm favourite everywhere. As an alternative, for something a little different, it can also be made with artichokes and broad beans. Either way, it’s full of exhilarating fresh flavours and vibrant colour.
