This is a very special and different risotto, which I normally serve to accompany lamb at The Vineyard – but it tastes wonderful in its own right. Risottos can be done in so many ways: they can be velvety, fragrant, luxurious, elegant or all of these. In this one, the lime brings a refreshing, sharp edge and balances the richness of the cheese and butter beautifully.
