  • 4 courgettes, cut into long 5mm/¼in-thick slices
  • 4 tbsp olive oil

Method

Preheat the oven to 180°C/350°F/gas 4. Combine the courgette slices, oil and half the thyme in a small bowl and season with pepper. Set aside to marinate for a good 15 minutes, so the herbs can work their magic.
