I find potato salad can be a bit heavy, which is why I love to put plenty of herbs in it. Sorrel and chervil are beautiful herbs but can be tricky to find; market stalls are your best bet. Wild sorrel can be found alongside rivers and in wetlands in the springtime – it looks like an elongated spinach and tastes quite bitter.
