In France, it’s quite common to eat pissenlits, or dandelion greens, as a casual salad. In this more composed version, we combine them with frilly, crisp escarole and frisée as a crunchy, peppery counterpart to sweet citrus and persimmon rounds. You can use any citrus you’d like, really. We like a mix of orange, grapefruit, pomelo, pink lemon, and kumquats, but blood oranges and other lemons and limes are also delicious here.
