Lemon is the simplest of sorbets, and one of the things the kids beg us to make. Our recipe is always equal parts sugar, water, and lemon juice, which makes it a cinch to remember. If we want a sorbet that’s a little more adventurous, we add a handful of lemon verbena or basil leaves or a few sprigs of fresh thyme or rosemary to the simple syrup when we take it off the stove, and we let the syrup cool with the herbs in it.
