Use this to toss cut iceberg lettuce and finish with rocket leaves on top. The cream provides a thicker viscosity to balance the iceberg’s bland nature.

Ingredients

  • 1 clove garlic, smashed with the flat of a knife
  • 1 part olive oil
  • 1

Method

  1. Rub the inside of the salad bowl with the garlic and discard the debris.
  2. Combine the oil, cream and seasonings, then acidulate with the verjuice to taste.
